Damaso Lee, has spent almost his entire
culinary career in fine-dining Italian restaurants.
His mentors early
on were Executive Chefs Nancy Fontes-Smith and Gianpolo
Putcu at the Il Fornaio restaurant in Del Mar, CA. He
was part of the opening crew and worked there for almost
nine years.

In his education,
Damaso has taken advanced culinary courses at the Culinary
Institute of America in Napa Valley, the Greystone Campus.
He has completed courses in Mediterranean Cooking with Jean-Louis
Palladin and Todd Humphries.
In addition he finished courses in Seasonal
French Bistro cooking, Provencal and Southern French Cooking
and an advanced course in sauce techniques. While studying
in Napa Valley he did additional training at two of Napa
Valley's
most prestigious restaurants - The Vigne in St. Helena and
The French Laundry in Yountville.
In 2000 he was presented a "Medal d'Or" by
Julia Child for his work with the UCSD Cancer Center Benefit.
